VEAL FOR ITALY.

SHIPMENT FROM GISBORNE. POSSIBILITIES OF TRADE. FILLING THE NATIONAL SAUSAGE. [llY TELEGRAPH. —OWN CORRESPONDENT.] GISBORNE. Friday. The steamer Gallic will load at Gisborno next week a shipment of frozen veal and beef for Genoa, this being tho first shipment ever mado direct to Italy from Poverty Bay. There is a possibility that the trade may grow to fairly largo proportions and bo a decided benefit to the district. ■ Speaking to-day on the subject of meat exportation to Italy, a business man with a wido knowledge of the meat trade, said the Gallic would be taking a large number of carcases of frozen calves to Genoa. This was tho first occasion on which New Zealand had entered the trado, and, as the calves which were sent away were thoso which had been culled out of the herds the trade would benefit tho district in more ways than ono. Only a few hundred calves were being sent out of Poverty Bay in tho present shipment but a large number were being shipped from Hawko's Bay. ■ The purpose for which the frozen calves aro nscd is rather of interest. Tho "roast beef of Old England" has its counterpart in Italy in tho shape of a large sausage' which forma a sort of national dish. This sausage is manufactured from veal, beef and pork and includes, in its composition a large amount of pork fat. Italy therefore, buys the heaviest weight pigs and also requires largo numbers of frozen calves and second grade beof for her sausage. . For a time the Argentine supplied many of the calves required in tho trade but her chilljjd beef trade has grown to such proportions that it does not now pay her to kill tne calves. Uruquay and Paraquay, both havo large herds of native cattle and the practice thero is to kill off many of the female calves which eventually find their way to -Italy. if Frozen veal from New Zealand has always commanded a fair price on the English market, but much that was shipped to London was eventually reshipped to Italy. Tho Gallic is the first boat to take a direct shipment and shopld the prices warrant "it further shipments will, no doubt, bo made direct to Italy.
