CARE OF SAUCEPANS.
(1) As soon as the pan is emptied, (ill it with hot water. and leave it to soak until it can he washed.
(2) If the contents were greasy, add a little soda to the soaking water (excopt in the case of aluminium). (3) If the contents " caught," put the saucepan i.n the stove, filled with soda water, and let it boil for half an hour. (4) Always clean pans as soon as possible after using. (5) Dry each pan carefully before putting it away., and if the shelf on .which it stands is not sparred,- leave a space where the air can circulate inside. 16) Try. as far as possible to have a saucepan for each kind of cooking, and to keep each utensil for its own particular duty. Aluminium pans must never be cleaned with soda'. Soapy water with a little silver sand will remove any discolouration quite well, anfl if the outside has got blackened. clean it with a piece of flannel moistened ' with kerosene and dipped in ashes. Rinse the pan in water and dry thoroughly'both inside and out.
