The cold storage of provisions has in gene-, ' ■ ral worked a wonderful revolution in many! tranches of ; business,; and !as the conditions' under which different food- products can bekept in a frozen state become better understood so does,the system become more and more valuable, both to producers and consummers. The following is from Chambers* Journal:—"A series of experiments has beenti carried out at the. Ontario Agricultural Co\jlege with a view to determine the best method of treating various descriptions of fruit' for cold storage, and the results have recently been published.: Apples ; and ; pears arer found to keep best when wrapped singly i«: paper and packed in shallow boxes of nob more than a bushel capacity. . The best fruit I only should be selected, and it should be stored before it is fully ripe, for the m&iur- i ing process goes, on in the cold, although more slowly than when the fruit is on the' tree. Medium-siited fruit keeps better than' the largest; and it is an advantage to plac« ' fruit of one approximate size in each case.. For all kinds of fruit there is a time-limit 1 beyond which it is unprofitable to keep it m' , ' the cold, and th<ifc limit for sound fruit fcv marked by the period of complete ripeness Both | the s fruitgrower and the shipper' ax*' now able to obtain: better prices for fruit;i ! the one by selling in the local markets Ist*,' - in the season, and the other by, $«***•" /
