ALMOND CREAM SWEETS Mix half a pound of well rolled icing sugar with half a pound of ground almonds in a basin. Beat the white of an egg till it is broken up. add it to the mixture, and stir to a smooth paste, using a wooden spoon first, and afterwards the hands. If the ■white of one egg is not sufficient to make the paste smooth, add a very little water. Knead the mixture on a board sprinkled with icing sugar, and cut it into portions. Parts may be coloured j pink by adding a few drops of cochineal and kneading it well in. Shape 1 the almond paste into strawberries, carrots, turnips, potatoes, apples or I flowers. If a brown shade is required : sprinkle with cocoa. Use a fork for | pricking holes where required. Leave the sweets to set for twenty-four hours j before eating them.
