Butter six or eight fireproof individual moulds and half fill with minced meat, beef or poultry, seasoned with one teaspoonful of Lea & Perrins’ sauce, salt and pepper. Make a sauce of £ oz. cornflour and£pt. milk. Stir in the beaten yoiks of two eggs, cook for a few minutes and stir in the stiffly beaten egg whites. Put the mixture on top of the meat and bake in a quick oven 15 minutes. Serve at once with
