THE PILLED VARIETY. P Filled milk lias reached the Philippine Islands, the native habitat of. the cocoanut cow. Practically driven from the markets of the United States as dangerbus to public health because of its dcceptivencss, tilled milk in new form has found a home in the American possessions in the Pacific. If differs from tlio American domestic product in that apparently it is entirely of vegetable origin instead of a mixture of skim milk and cocoanut oil. The following glowing account of “Cocolnit” appeared in the Manila Daily Bulletin of November 17:— “Milk and cream at prices approximately the samo as those charged in the dairying districts of the United Stales will be available to Manilians beginning-Monday, November 19. The source of the milk will be the Coconut Dairy, located on Gallo Pureza, Santa Mesa. The new milk is a vegetable product, but is similar to cow's milk in appearance and quality and has the same food contents in slightly- differing proportions. Its taste is unique, nor to say delicious, and one who is not accustomed to drinking fresh cow’s milk would have to taste Cocolait twice t.o distinguish the difference. Of course, there is a taste of cocoanut, but it is so slight that it is hardly noticeable. “Cocolait looks so much like cow’s milk that it is difficult to distinguish the difference. After sitting -for a time undisturbed, cream rises to the top. This cream can be whipped the same as any other high grade cream. It contains fat, and butter can .be made from it. It sours, as docs fresh milk, and, according to women who have tried it. delicious recipes can be made from it.’’
