“FISHY” BUTTER.
“Fishy flavour” is frequently alleged against imported butter on the London market. Local purchases in Palmerston North unfortunately discolse the same fault, which has been wrongly attributed to long storage. A traveller who moves freely through our country roads says there is a more feasible explanation, and suggests that if the health department or the dairy division of the Agricultural Department cannot be induced to tak e proper steps to check the evil, then the dairy factories should at once apply the remedy, which is simple and inexpensive. The main trouble, our informant says, arises from the fact that hundreds of milk cans stand for hours on the roadside in the hot sun, awaiting transport to the factories. Not one in five farmers provide shelter from the sun for these cans. Any housewife knows what would happen if the domestic milk supply were treated in this slipshod way.
