Report of the Analysis of a Sample Dorase received from Mr J. T. Norton, Lyttelton; “I have examined the Dorase manufactured by Mr Norton, and am of opinion that it wili prove distinctly useful to bakers by giving greater certainty to the process of fermentation. Pure flour, even though of the bcsl quality, does not provide a very suitable home for the best yeast cells, but is better adapted to the wants of many bacilli and undesirable yeasts, by which tho true yeasts are apt tc be crowded out. Not only the lightness, but tbe flavour, texture and colour of bread being largely dependent upon the process of fermentation, anything that will bring this under direct control is of great value. The use oi diastase to convert the starch of flour into a fermentable sugar appears to be a step in the right direction, and the ‘ Dorase ’ of Mi Norton supplies this diastase in a satisfactory form, together with other nitrogenous yeast food.
