When making fruit pies or tarts, etc., if a little flour is sprinkled over the fruit before the top layer of pastry is added the syrup will be thickened and the juice will not boil over and soak into the crust. When vanilla essence is too prominent in cake mixture, custards, etc., add a little lemon essence; this counteracts the flavour and gives a delicious taste.

If you require very fine parsley: Crisp it in a cool oven or on a plate rack and then-crumble in the fingers. This method is quicker than chopping, but be careful; overheating bleaches parsley.
