DAIRY PRODUCE FOR EXPORT.
The Dairy Commissioner (Mr J. A. Kinsella) has issued a circular to shippers of dairy produce, in whioh he states that in grading cheese last season atandards were fixed between the buyer and the faotory, without the knowledge of the Government grader, and it thus happened that on several occasions a parcel of cheese fas ranked by the grader as second quality through being one point lower than the first quality of the standard arranged. The department, to overcome this difficulty, and realising that the time has arrived for the official grading of all faotory cheese, has decided to examine all cheese and judge on the merits of the produce irrespective of points. The pointing of factory cheese will afterwards be done to denote particulars of quality and finish, and also as a guide to the maker. The standards will be as follows :— First grade, 88 to 100 points ; second grade, 80 to 87 points ; third grade, under 80 points. In view of the difficulty of pointing dairy cheese accurately, and with fairness to the buyer and seller, the department has decided not to point this season, but will inspect and grade each parcel, • classifying same as first, second, or third grade, according to the average quality of the parcel.
