Ingredients; 3 tablespoons rice, 1 pint milk, | cup sugar, 4 eggs, 1 tablespoon butter, 1 lemon. Method: Cook the rice in the milk until soft. Add the sugar, egg yolks, butter, lemon juice and grated rind. Bake slightly until set. Put aside until cool and then cover with a meringue, made with the whites of the eggs beaten stiff, a cup of sugar, and one cup of coconut. Leave in a cool oven until firmly set.
