SOUTH AFRICAN INDUSTRY'. Tooley Street, celebrated a century ago for the posing of Three Tailors oi Tooley Street in a petition to the House of Commons as “We, the people of England,” is now better known among farmers as being the cheese market of London. A South African, who knows what he is talking about, has been there, and goes nap on South African Cheddar cheese. There is no market in London for South African Gouda cheese, for the reason that it is not superior to Holland Gouda, and Holland has the great advantage of proximity. Turning his attention then to Cheddar, the inquirer after knowledge says: “As a South African it was most gratifying to me to be informed that Cheddar cheese made in the Union of South Airiest was in flavour and quality better than that produced in any other of the British dominions. Some of the superior Cheddars from our country were considered, to be equal to very good English Cheddars. Cheeses from all the dominions were examined and tested, and the flavour of the South African article was distinctly, the best. The flavour was clean, and pleasing to the palate.' ’in texture the cheese was considered satisfactory. The severest criticism is directed against the colour. It is considered that in many instances the colour is not proper K defined, and shows a lack of uniformity which, for the London market, is undesirable. The cheese .should be definitely either white or coloured. It was complained that- South African Cheddar, while good, is in too small quantities. If, as a minimum quantity, 100 tons a month were supplied, and the standard of quality and uniformity maintained, it would be possible to establish a good trade with South Africa. It is generally agreed that South African Cheddar-will fetch from 4s to 10s per cwt more than the New Zealand article. Hie South African Cheddar cheese industry may have a big future before it.
