BREAD WEIGHTS.
AN EXPERIMENT. (BY TELEGRAPH PRESS ASSOCIATION.) ELLINGTON. Auer 19 An arrangement lias been arrived at between the Department of Health and the Master Bakers’ Federation in reference to bread weights, and it is to be tried for a year before making a regulation. Scope is to be given the bakers to make special types of breaci for customers requesting it, and enable a, customer to hold ' a baker to .true weight in ordinary bread. It has been possible in the past for an, unscrupulous baker to sell underweight what was really ordinary bread by claiming that the particular shape was fancy bread. The conditions .to*apply now aie that ordinary breaci, irrespective ol name or shape, is to be full two or four lbs, except small loaves, which may be nil to 1-jlbs., and distinguishable from full weight loaves; other bread different to white bread, up to Ijlbs, including currant and Vienna loaves; but not brown wholemeal or malted brown bread, which are not under consideration meanwhile; “Vienna” bread is to be bread made with the additional use of super-heated steam, not Miked’ in a tin, but of long oval shape, with three or more slashes across the surface prior to baking.
