The New Thawing Process.

Mr Fred A. Farlooge informs us (Hawera Star) that a very successful test of the above process was completed at the Waitara Freezing Works last Saturday afternoon, and in the opinion of all those who witnessed the result, the future of the process was fully assured. A fore-quarter of frozen beef was put in to thaw out on Friday evening at 7 o'clock, the operation being completed about noon on Saturday. In outward appearance the meat had retained its natural color, and to anyone " not in the know " it would have been almost impossible to to tell that the beef had ever been frozen. On the quarter being cut, there was no " weeping " - that grave defect at the present time that makes frozen meat thawed out in the ordinary way so objectionable and which depreciates its value so largely — and the inner appearance of the meat was all that could be desired, being of a bright red colour like what that freshly killed would be. Mr Furlonge brought back some of the beef with him to Hawera, which was shown to several resident gentlemen, all of whom were high in their praises of the result obtained. After seeing the meat we can also add our testimony to what has already been said about it. Thero is no doubt in our mind that this thawing process is a very important development, and should prove of inestimable value to settlers in this district and the colony generally who have fat cattle, as it should encourage them to start freezing on their own account again, it being evident from the resnlt witnessed that the beef if thawed out in this new way would be largely enhanced in value, and a source of profit instead of loss to the shipper, and would, moreover solve the difficulty at the present time, namely, what to do with fat stock, for sheep can be treated equally as well as beef, and, as a consequence, their value at Home raised in proportion.
