Butter said Cheese Exhibits FACTORY CLASSES JUDGED Regarded as one of the finest displays of dairy produce ever seen in the Dominion, the factory butter and cheese classes at the Otago Agricultural and Pastoral Society’s Winter Show were judged yesterday. It was remarked by the judges that the butter entries showed a slight decrease compared with last year’s figures. The striking feature of the exhibits was the uni* fonnity of quality. To be critical it was agreed that flavours would have shown to advantage with rather a fuller aroma. , It was noteworthy to record that one entry evidenced the desired flavour in this respect, but did not appear on the list of prize winners owing to defective colour. On the whole, the butter had evidenced good keeping qualities, and butter factory managers were to be congratulated on the uniformity of this exhibit. The entries of cheese showed decided falling-off compared with the previous year’s, and doubtless the contributing factor in this respect was the abnormal climatic conditions experienced during the greater part of the season. It was pleasing to record that the general quality of the produce had been again maintained. The prize winners had reached a high standard, and little fault could be found with the quality of these. Openness in texture was, however, the chief fault with the remainder, but, on the whole, dairy factory managers were to be congratulated on the staging of such a pleasing exhibit.
