stove, add the gelatine, which has been allowed to soften in the cold water. Set aside to cool. When just about to set, lightly stir in the whipped cream and lemon juice. Pour into a wetted jelly mould, and when set turn out and decorate with whipped cream.
MONDAY.
Scotch Broth. Rice -Oranges Sicilian. Leeks, Potatoes Steamed, Baked Ginger Pudding.
Rice Oranges Sicilian. —From the chef on a Mediterranean liner. 1 cup uncooked rice, 2 egg yolks, -J cup grated cheese, 2 tablespoons butter, chopped cooked meat.
Cook rice in usual manner in boiling salted water. Drain thoroughly and add yolks, cheese, and butter. Mix all together. Shape rice into balls, stuffing the centres with chopped cooked meat which has been seasoned to taste. Roll in flour, beaten egg and crushed wheatmeal biscuits, and fry in deep fat until brown. Serve with cheese sauce or grated cheese sprinkled over.
Baked Ginger Pudding.—2oz butter, 4oz sugar, 6oz. flour, & teaspoon baking powder, 2oz preserved ginger, § teaspoon ground ginger, 1 egg, little milk.
Beat butter and sugar to a cream. Beat in the egg, add flour sifted with baking powder, then the ginger, and preserved ginger cut into small pieces. Add just enough milk to make.a fairly stiff mixture. Pour into a buttered piedish and bake in a moderate oven.
