EPICURES AND PLUTOCRATS

To an Englishman an egg means a hen's egg, or perhaps a big green duck egg for a treat, while plovers' eggs are eaten by epicures and plutocrats, writes Mary Bridge in an exchange.

■ But, as a matter of fact, many other birds' eggs are edible. Turkeys' eggs have a particularly delicate flavour, and the eggs of seagulls are, quite good but fishy, as might be expected. Gulls' eggs, by the way, are sold by the less scrupulous dealers as plovers' eggs.

In South Africa penguins' eggs are now considered a great delicacy. They are about twice 'the size of a hen's egg and a single one will make . a good omelette. A favourite South African dish is curried penguins' eggs served with onions.
