Tomato Soup.—Put the tomatoes and stock into a saucepan, boil gently for three-quarters of an hour; rub through a hair sieve;'mix, an ounce and a half of butter with an ounce- and a half of flour. Put it into the saucepan and stir with a wooden' 'spoon till it is quite smooth; add the strained soup gradually, stir one way until it thickens, then add pepper and salt to taste. Just before serving add a gill of cream to this soup. ' It is a very great improvement, but riot a necessity —-the soup is very nice without the cream. Russian Pie.; —Take any scraps of cold beef, mince; finely, and put in a saucepan with very, little water, and salt mid pepper; heat to almost boiling point; do not allow, to boil; put aside to cool a little. Have a square of puff paste- about lOin square, place prepared mince in the centre, and fold the four corners, into the centre. Brush over with beaten egg, and bake in a hot oven until a nice brown.
