Owipg to climatic conditions, wheat -i-owii in New Zealand does not always provide the best loaf for. the. consumer, reports the "Australasian." Vov this reason a substantial quantity of Australian wheat and flour is imported into the Dominion, but in recent years trading lias become increasingly difficult owing to pressure brought to bear upon the Incur Zealand Ministry to amend the duties in favour o£ the wheatgrower. Although New; Zealand does not always produce sumeient wheat to meet its own requirements, it is necessary even' when there is a surplus to purchase Australian supplies .for blending purposes. Steps have been taken lately •with a view to improving the quality or New Zealand wheat and to cheapen the cost of bread to the consumer. At a meetin" of those interested in the subject, held in"Canterbiiry on 3rd May, it was said that co-operation of the Department of Scientific ltesearch had been obtained in establishing a wheat research institute. A council had been formed, consisting of representatives of growers, Hour millers, bakers, the Department of Agriculture, and the Department of Scientific Research. A small levy ,was t« be imposed on flour, payable by millers and bakers, and this was to be adjusted to make the payment amount to about Id a bushel a week. This the Government would subsidise to the extent of £1 for £1. The objects of the institute are to improve the method of growing wheat, to advise as to the best mixers of wheat to use in milling, and to (leal with the question of moulds of flour and. other fungi. - x •
