EXPORTABLE BUTTER AND

CHEESE

Although the Palmerston North Winter Show is a dairy show first and foremost, there is nothing to justify giving pride of place in a review of the various sec-: tions to that devoted to butter and 'cheese. From the point of view of tho general public, and, after all, ifc is to the general public that the association must look for its main support—there is nothing very attractive about butter and cheese displayed behind a wire-netting barrier. Nobody but the expert would think of visiting the show for the sole purpose of examining the butter and cheese. To most people all butter is alike in appearance, and may be more closely examined any day and almost anywhere. It is only after examining the judges' card and noting tho points for flavour, for colour, and the like, that the layman realises that a.ll butters are not alike. But even the closest examination of these cards will not make the layman an expert. Exactly the same may be said of cheese. THE SPIRIT OF RIVALRY.
