The culinary departments, under a first-class chef, exemplify a methodical arrangement and cleanliness that could not be outvoted, and one of the greatest troubles with a large establishment of this nature, that' of abnudance of hot water, is ob.viated by the installation of a powerful high pressure furnace, specially installed for the proprietor by Mr. D. O'Eeilly, the local espert plumber. Another feature of the management of this hotel is the fact that a model freehold farm of some twenty-four acres, situp.ted in the Hokowhitu, is run in' conjunction with the house, and from this source the "Club" is daily supplied with pure, fresh milk, cream, and butter from a picked herd of Jerseys. The gardens, too, yield, their best and freshest vegetables daily for the household, while tho choice poultry, pork, and fresh eggs are also the product of this model farm, where everything is reared and cared for under the. most sanitary and scientific arrangements. The whole place is a surprise to most visitors. Everything and everywhere is spotlessly clean, and stands as a revelation and an important adjunct to the conduct of Palmerston's-j first and foremost hotel. The wine and | spirit vaults, run in conjunction with | the hotel, carry the largest stocks possessed by any similar business in. the I Dominion. A feature is the immense j quantities of rare old wines and all classes of liqours imported direct and sold by the single bottle at wholesale prices. They have their usual tastefully arranged exhibit, adjacent to the Agricultural Department's section, where prominence is given to a display of rare vintage wines, indented direct from the Auldana Vineyards, South Australia. The high excellence of the products of "Auldana is now so thoroughly established, and the quality thereof so widely appreciated, that little need be said to enlighten the public, We would like to say that Messrs. Reginald Collins nnd Co., Ltd., would indeed be happy to meet old and new clients (especially those interested in fine wines) at their exhibit on the showgrounds, where the firm's hospitality will be cordially extended.
