ADULTERATION OF BEER. TO THE EDITON.
Sir, — Your correspondent "Moderator' has touched a subject which should be o! interest to all beer-drinkprs. Qood ale, as I understand it, should not hurt ant one— properly brewed it is even a whole ' some drink for children ; but the horrtblt concoction sold in many Wellington ho tels as beer is, as your correspondent very correctly remarks, absolutely unnt for human consumption. Some few months ago I went into a certain hotel and askea for a "long beer," which 1 endeavoured to drink, but my stomach absolutely refused to keep it down, and I suffered the agonies of sea sickness I tried this hotel again, with the same result; and as I am interested in beer 1 bought three pints in separate hottles I two of which I sent to two dif ferent analytical chemists in Australi* for analysis. I Can only say that nevci in the wildest nights of my imagination could I hare thought that such a com position would be allowed to be offered to' the public as a wholesome drinit. New Zealand should be able to produce malt and hops equal to English, and these ingredients alono compose beor any other substance is adulteration. .1 noticed in a certain paper an advertise ment: "Wanted, a first-class brewer: must bo a good cheinisi." .What fur.
