Although everyone knows "the bull is half the herd," it is remarkable how many men will buy a young untried bull in preference to a proved sire, merely to save a few pounds. There is no case in which a pennywise policy is more to be condemned. The choice of a herd leader demands care and judgment and the breeder who takes the trouble to inspect the progeny of his prospective purchase will be amply rewarded.

. Milk may be coagulated by acids, rennet or the juices of various plants. When milk coagulates, a curd forms and whey is liberated. Rennet is used in the manufacture of cheese, this being the best means of producing a suitable curd. When milk is kept warm it gradually becomes more acid, and, on the acidity increasing to about 0.8 per cent., the milk coagulates spontaneously.
