To-days Recipe FISH CAKE

Take half a pound of cold fish. 3oz. breadcrumbs, 1 onion, Aoz. of dripping or butter, half a gill of milk or fish stock, a little chopped parsley, 1 egg. Grease a shallow cake tin and line it thickly with rasped crumbs. Mince the onion and parsley. Melt the fat in a saucepan. Flake the fish, removing all bones and skin. Warm the onion and parsley thoroughly in the fat. Stir in tlie fish and breadcrumbs. Take the pan off the fire and stir in the milk and the egg, which has been wellbeaten. Now pour it all into the cake tin and bake in a moderate oven for about three-quarters of an hour. Turn it out and serve hot.
