Blueberry Muffins
Apologies to anyone who tried to make blueberry muffins from the recipe in Mavis Airey’s column on Saturday. The recipe should read: Place in a bowl P/a cups flour, 2 teaspoons baking powder, i/ 2 teaspoon salt, 4 tablespoons brown sugar and 1 tablespoon white sugar. In a separate bowl, beat 2 eggs, % cup milk and 3 tablespoons oil. Add this to the flour, beating only until moistened; then add % cup fresh or frozen blueberries. Place in greased muffin tins and bake in a preheated oven at 215 degrees for 25 minutes. Makes 10 mediumsized muffins.
