Chocolate mousse
INGREDIENTS 125 g of plain chocolate 4 eggs 1 tablespoon water METHOD 1. Break chocolate into a bowl. Add water, heat some more water in a saucepan until it simmers. 2. Stand bowl over the saucepan until chocolate melts. Stir until it is smooth, then stand aside to cool. 3. Separate egg white from yolks. 4. Beat yolks until smooth, then add them to
the chocolate. 5. Add a pinch of salt to egg whites and beat them until they stand up in peaks.
6. Gently fold egg whites into chocolate mix- ] ture, using a metal spoon, < until it is evenly mixed. I Do not beat it. , 7. Carefully pour the 1 mousse into a serving i dish and refrigerate i for a few hours until • it sets. Sprinkle the ' mousse with grated cho- ' colate and serve it with cream. ?
