Tomatoes and cheese

Tomatoes and cheese are very quickly prepared and if serving as a luncheon dish the addition of mushrooms and bacon is an improvement but not essential. Tomatoes and cheese also accompany a grill very successfully. For six servings you will need:— 3 large Firm tomatoes 6 small round pieces of toasted bread Onioi and green pepper 6 tablespoons grated
cheese Salt and pepper. Method: Peel tomatoes by immersing in boiling water for one minute; cut in halves and place each half on a round of toasted bread of the same size. Season lightly. Top with a tablespoonful of chopped onion and green pepper mixed in equal quantities and on top of this sprinkle a tablespoonful of grated cheese. Place under a low grill for a few minutes.
