Sausages And Steaks
The owners of a new food shop in a city arcade have decided that New Zealanders should eat some of the venison coming out of the Canterbury and South Westland bush for export to Germany and America. They are making venison sausages, steaks, pies and casseroles and finding a good market.
They have also discovered that ‘New Zealanders do not like their venison “high and gamey” like the venison eaten on the Continent, and have made sure that their products are more suited to the local palate.
The sausages are made In the old-fashioned way with a high content of minced meat. The venison steaks are back steaks, which are the equivalent of fillet steaks of beef. The owners of the shop say they are trying to put venison on the local market instead of letting it all be sent overseas. Their venison sausages will soon be supplied to selected restaurants and retail shops as well. They also hope to sell them to overseas ships.
