Food For Thought APPLE CAKE

I have called this recipe Apple Cake, but it can lead a double life—it can be used for a dessert, with sugar and cream, or it can be split open and buttered for school lunches.

■ You will need: 3 cups flour 1 teaspoon salt 3 teaspoons baking powder 3 tablespoons butter 3 tablespoons sugar 2 good sized soft cooking apples (peeled, cored and cut up into small dices, but not minced). 1 beaten egg

1 cup milk. Method: Sift the flour, baking powder, and salt, and rub in the butter. Add the sugar and diced apples, mix in the beaten egg and milk. Blend well. Butter a sponge tin. Cut out a piece of butter paper for the bottom, turn in the mixture and spread evenly. Bake for 45 minutes to one hour at 350 degrees.
