Egg ovens for the artificial hatching of chickens abound in Lower Egypt, and many of them have a capacity for hatching 40,000 eggs at one time. It was estimated some time ago that upwards of 90,000,000 chickens were hatched annually in these ovens. The secret of their structure and management is carefully guarded. The hatching of chickens by this method is an important industry. It is almost entirely in the hands of-the Copts, who make quite a mystery of the . whole process.
