! TO THE KDITOH OF '"THE TRESS." Sir, —'Regarding the report "Swans 7 Eggs," in this morning's paper, 1 think that the Government are neglecting a most valuable and nourishing food asset in those same eggs. Mr'Parkinson, of Little I?iver, wrote a long time ago, advocating the collection and export ol' these eggs, but the subject seems to have been dropped. Swan carcases were sent Home instead, but there is very little on .a swan when "unplucked,'' and it is rank and nasty at that. The PggSj however, are of comparatively mild flavour. and as food value one is equaf to about four hen-eggs. They would lie invaluable for use in hospitals, or for eon- ■ valescents, served as beaten egg with milk and brandy, custards, milk .pud- | dings, scrambled eggs, ctc. Save the j swans, and send the eggs home chilled, j Another good food asset is mutton- J birds' eggs, used greatly in cake-mak- j in<i in Australia. —Yours etc.. j A. HARM AN. j April 14tli.
