BARLEY WINE.

Hitherto Hamburg has claimed the premier place in the manufacture of wines from other sources than the grape. From a recent' British consular report a discovery has been made, which, it is averred, will in the future induce as great a revolution in the wine industry as beetroot did in the production of sugar. The new Hignjdient is barley, which is malted and carried to a point of fermentation, when lactic acid and vinous ferments are introduced. By this means, it is stated, sherry, port, tokay, and malaga wines are successfully imitated. A large factory is now at work at Wandsbek, near Hamburg, which is said to produce 1,000,000 gallons bf these imitation wines per annum. The wines are artificially matured by being raised to a high temperature. It is claimed that these malt wines are, from a chemical standpoint, actually purer than the wines made from gripes, but their taste is insipid. The system, is still in its infancy, and hence hopes are entertained that further discoveries will be made which will render the wines as palatable as those in ordinary use.
