MILK SUPPLY.
TO THE EDITOR OF THE PRESS. Sir, —We often bear this colony called "a land flowing with milk and coney." Any one with a family living in Christchurch find that if they indulge in the enjoyment of milk that its coat makes- a considerable encroachment upon .their, income. It has been a puzzle to mc bow oar country fanners can supply; the factories with milk at 3sd and 3id per gallon, when we in Christchurch are called npon to pay Is4d. The London market, I understand, is now closed for this season's batter, which means that the whole of oar Autumn output from the Central, Tai Tapa, Belfast, Flaxton, Rangiora, Leßoa's, and " other factories will flood bur' local market with butter. I cannot ace how present prices can be maintained. Should the price of butter be reduced if follows that the pries of milk to farmers must come down to 3d or probably lower to meet this difficulty. Cannot the Central Factory see their way to supply the city and suburbs with a cheap supply of milk. If they charged 8d per gallon it would be 100 per cent, cheaper than we pay at present, and enable many families to obtain milk that at present time is denied to them, and relieve the factory of an over supply of batter. —Yours, &c. t ■ Wh. Baksett. Sydenham, Febnuiy 176b, 1894.
