They can be lettered with a pen in Indian or, preferably, marking ink. . They can be scratched .with a knife blade or sharp pointed instrument, and inked in afterwards if desired. v The advantage of scratching the surface is that the stainless plating is pierced, and the air will oxidise the underlying metal, thus emphasising the lettering after a time.
