PRESERVING FRESH BUTTER.

The ' Field ' gives the following recipe for keeping butter fresh for a term : — To three gallons of brine, strong* enough to bear an egg, add a quarter of a pound of white sugar and one table-spoonful of saltpetre. Boil the brine, and when it is co!d strain carefully. Make your butter in rolls, and wrap separately in a clean cloth, tying up with a string. * Pack a large jar lull, weigh down the butter and pour on the brine until ifc is submerged. This will keep the butter good and fre.-h for a whole year.
