OFFICERS ELECTED.

AUSTRALIAN EX-SERVICEMEN,

The first annual meeting of the Australian Imperial Force Ex-Servicemen's Association, held recently, proved most successful. Officers elected were: Patron Air. R. Long; president. Mr. E P Titchener; vice-presidents, Sister F Mellsap, Messrs. W. S. Morrison. V. J Parkinson; committee, Dr. Fitzgerald, Padre H- K. Vickery, Messrs. G. Browne, E. B. Clarke, W. Williams; hon. secretary and treasurer, Mr. N. R. Chapman. Reference was made to the great responsibility placed on the association in being asked to conduct the first dawn parade ceremony next year, which the Governor-Oeneral, Lord Galway, will lead, and at which he will recite the Anzac dedication. The parade will also be attended by the Prime Minister. It was decided to hold the usual reunion dinner on Armistice night. The president paid tribute to the work of the honorary secretary, Mr. X. R. Chapman, who was made the recipient of a small presentation.

Good butter, when cut with a knife, should exude neither water nor milk, and the knife should be free from the slightest rancid #mell. If a corner of a slab of butter be broken off, the wall should show a roughish fracture. If it breaks perfectly smooth, it is of poor quality. Butter should be solid. Crevices often set up fermentation. Colour i.« not important. The popular rich yellow is sometime* artificial. In any case, whatever colour there is should be uniform and not patchy. If a small piece of the butter is taken and pressed against the palate, the flavour should be neither cheesy nor harsh. If heated, gpod butter melts quickly into foam, and does not "splutter."
