• Have four slices of hot buttered toast ready. Wash four ounces of shrimps and simmer for five minutes in enough .water to cover. Strain. Melt I oz. butterin saucepan,add l.oz.flour, J pint milk (slowly) and simmer for 8 minutes. Add salt and pepper, 2 oz. grated stale cheese, Iteaspoonful Lea& Perrins' sauce and the shrimps. Reheat, pile on hot buttered toast, sprinkle top with cheese,and brown under grill. Serve at once with LEA & PERRINS SAUCE I
