Take about one cuprul or cold cooked peas, lib cooked new potatoes, lialf teaspoonful chopped parsley. Slice the potatoes, mix Willi oilier Ingredients and serve with Worcester mayonnaise; garnish with chopped white of egg. Make the Worcester mayonnaise tiiis way: Take the yolk or one harcj-boiled egg, rub till smooth, and add hair teaspoourul ol' made mustard, two tablcspoonruls milk, pepper, salt and cayenne. Mix well and add one tablcspoonl'ul vinegar very slowly and one tablespoonrul ol' Lea & Perrins sauce. "It is absolutely essential," says Miss Una Carter, "that the sauce should be Lea & Perrins, as its wonderful flavour is so subtle a blend, due to the special ingredients used, and to the long maturing or the sauce, that it is not possible to give this mayonnaise the required delicious 'tang' with any other sauce."
