QUALITY OF FLOUR.
COMPLAINT BY BAKERS. REPLY BY MILLERS. (By Telegraph.—Press Association.) DUNEDIN. this day. The . executive of the NW Zealand Master Bakers' Association met Distributors,. Ltd., with a request for a supply of better quality flour, and received an assurance that the millers weTe out to give the best quality. . Mr. Andrews (Wellington) who put the bakers' case, said that unfortunately there were still millers who supplied the poorest quality of flour, and the bakers wanted a definite conclusion as to what was first quality, in order to meet the requirements of the Hea'.th Department and their customers. Some discussion occurred whether New Zealand bakers wanted flour in different qualities, the reply being that they did not. at present, but it was complained that millers were providing different qualities of flour at the same price. Mr. Corson, replying for Distributors, Ltd., stated that they were out to improve conditions. At "the last conference he had told them that, by reason of the Government interference, millers were not allowed to make the best quality flour. They had not lost sight of the question of scientific investigation, and a member ot Distributors, Ltd., was going to England to take a course in cereal chemistry. Mr. Corson condemned the Board of Trade for dealing sectionally. Speaking of importation, he stated that the moisture content in Australian wheat was 9J per cent, but, after milling, the flour contained 14 per cent. If the Government did their duty Australian importations would bo carefully analysed. '"It's high time we bakers fought against being the catspaw of the miller, politician. Press, or any other humbug who likos to attar-k the trado." said Mr. Andrews (Wellington), speaking on an address by Mr. Millar (Invereargill), at the Bakers' Conference. Mr. Millar had urged that an antagonistic attitude towards bakers was largely caused by unceasing journalistic attacks, which were invariably characterised by a lack of logical sense and inaccuracy. It was resolved to .appoint Messrs. Millar, Andrews, Hawkes (Christcliureh), and Barker (Auckland as a vigilance committee for the association.
