TO THE EDITOR. Sir,—-Can you inform me if the Inspector of Slaughter-houses for Ashburton is m any way responsible for the condition of meat exposed for sale by auction m this town? If so he should have inspected a carcase of pork offered for sale on Saturday last m Ashburton, and not only condemned the lot as totally unfit for food, but taken immediate steps to punish the offending owner who endeavoured to palm off such stuff as I refer to on the public here. The mutton at the same place would hardly pass muster at either Belfast or Islington freezing works, and the excuse perhaps ready that " this line is for dog's meat" will not hold good as regards the " pork," as it is well-known even dogs won't eat that, even if good meat, much less such rubbish as above noted.—l am etc., Wallaby.
