A new process of preserving meat has been patented. Meat is immersed m a solution for a few minutes, when a coating is formed, effectively preventing the escape of the juices, and enabling it to resist ihe attack of deleterious germs, The coating disappears upon cooking. The inventors claim that meat can be preserved for weeks and months at the cost of one-fifth of a penny per lb. Whether the process is suitable for exporting meat has not yet been tested. Externally the meat shows slight shrinkage, but when cut is fresh and juicy. The experiments, so far, haye been successful.
