PIONEERS IN ELECTRIC COOKING.

For the last four years the practical development of electric cooking in Great Britain has been confined by war necessities to puiblio kitchens and canteens in munitions works and other industrial establishments. This field, however, so wide, so important, and so exacting in itself that the success of cooking by electricity tor large numbers of people haa impressed the public deeply with the advantages of this method. During this period, moreover, the, domestic electric cooker has not been altogether neglected.

Improvmects in design have been ibtroduced by British makers, and the new types ltow being put on the market .represent a distinct advance upon even the high pre-war standard. It should not be forgotten that the application of e'ectricity to cooking was more scientifically studied in Great Britain than anywhere else. It was in Great Britain that the experiments were made which proved that the electric oven, when properly designed and used, reduced the shrinkage of meat in roasting and so rendered the process more economical and much more hygienic. Similar experiments in other kinds of cooking have established the claim that electricity produces more digestable and wholesome results than any other source of heat; and as so much concern is now being paid to national health this claim is not likely to be overlooked. In electric heating also British engineers have been in the foreground with designs which achieve the most efficient results. Here the problem ranges from the domestic electric fire through many forms of industrial heating, such as glue pocs, japanning ovens, drying ovens, and so on) to the electric furnace for the melt, ing an drefining of steel, brass, and other metals.
