CHICKEN JELLY.
Skin the chicken and joint it ; wrap the ! 1-ieces in a clean cloth, and break them up. Cut off the claws, and immerse the feet in boiling water, which will ma&e the skin come c£t easily As they contain a good deal of nourishment, put them with the rest of ' the chicken in a saucepan, and cover -with two quarts of water Let it simmer slowly j for tv/3 hours, strain "through -a sieve, and j set aside -to cool When perfectly cold re- > move the fat from the top, and a very -delicate | .and nutritious jeUy ■will be found, :which is . greatly relished by invalids. Variety may be obtained by substituting a young .rabbit, ior j the chicken.
