Unless the fish actually smells when received there aro many housewives who cannot (especially with the gills removed) tell how long it is since it has been caught. These should certainly bo protected from unscrupulous dealers, aud tha public health conserved. What, too is to prevent the purchase of cancerous fish, so many of which have lately beei) found to exist among the imported trout? Meat, milk, and other foods aro dealt with by our laws and subjected to careful inspection, but fish, than which nothing is more likely to bring on serious ilhiesa if bad, seems to be overlooked. How often is a hawker's cart or barrow examined when on hi% rounds?
