A PLAIN CABINET PUDDING.
Served with a sweet sauce, this is really a very nice pudding, suitable for lunch or for the schoolroom. Stale bread, about Jib, one egg, half a pint of milk, loz moist sugar, vanilla, loz. raisins. Well grease- a pudding basin, cut the raisins down one side^ — without quite- dividing them, remove the stones, amd press them on to the basin with the fruity side next to the basin. Next beat up the egg, add to it the milk, sugar, and vanilla, to taste. Cut the crusts from the bread, and cut the crumb part into neat little squares. Put the bread into a basin and pour the custard over them; leave it for 15 minutes for the bread to soak. Now put the mixture into the prepared tin, taking- care not to disturb the raisins; Twist a piece of greased paper over the top of th.e< basin, put tit in a pan with boiling water — to come' halfway up the basin — and steam for one hour. Turn carefully on to a hot dish, and serve with it
