THE DAIRYING INDUSTRY.
PROGRESS IN MARLBOROUGH.
—Tie dairy industry, in keeping with, other parts of the Dominion, has shown marked progress in, Marlborough during the last few years, and in no district has this growth been more rapid than the Rai Valley (says the Pelorus: Guardian): Here the fast disappearing bush is giving place to fertile grazing areas, and the transformation .scene is becoming more complete each year. From a very modest beginning the Raj.. Valley dairy factory now receives the daily product from no less than 560 cows. The number of suppliers is now 24, which gives an average of nearly 24 cows to each supplier. At the Oanvastown factory the industry is showing steady progress, the present number of suppliers being twenty, who control 350 cows between them. The Pelorus and Wakamarina Valleys are well adapted for dairying, and feed is generally plentiful"even, in the dryest seasons. The *bove figures do not nearly represent the full capacity of these districts. The Grove, as an older district, well maintains its're-*, putation as a dairying centre, both for the quality and quantity of its cheese output. Here the suppliers number 16, who operate from 412 cows. The Havelock dairy factory is not far behind in number of cows, the .actual figures being 377, from 19 suppliers. Cheese is the almost exclusive production of the four factories referred to above, and a high quality test in every case has been secured and well maintained. Providing the factory mancagers az*e rigid in keeping the suppliers up to the required standard of cleanliness (particularly users of milking machines) there is no reason to fear that this satisfactory state of affairs will not continue. In every instance where quality has suffered in the manufacture -of cheese, the cause has been traced to uncleanliness. The whole output of a factory is thus likely to be affected through the shortcomings of one or two individuals.
